It doesn't have to make sense. It's a child using his imagination, just like Wild Things and Outside Over There. It's a child faced with some sort of dilemma (insomnia in this case) and dealing with it by escaping into a fantasy.
John Cech's book Angels and Wild Things explains it all.

This is one of my favorites of Maurice Sendak! Mostly because it's kinda scary... I usually love Maurice's stories for real, but I just can't take this one seriously.
By the way, I completely agree with Cocobrun even though what I just said may sound like I don't.

I'm going to be serious on this comment. I know Maurice Sendak was jewish. In this story the chefs have mustashes simular to Hitlars. Does anyone have an idea what reference this could be?
