Saxes *aren't* standard instruments in a symphony orchestra, you're right, but a lot of large-scale 19th-20th century works employed them occasionally; the same can be said of oboes d'amour, basset horns, euphoniums, and so on.
I believe it was composers like Wagner that got the ball rolling in this respect- Ravel, Holst, Stravinsky and so on followed suit.
Typically, orchestral sax parts will be performed by flautists or clarinettists- the fingering is very similar for these instruments. :-)
